My Ratatouille Recipe

If you're looking for a wonderful accompaniment to meat or fish, then look no further than this Ratatouille recipe. Also referred to as Caponata in Italian cooking. It's quick, easy and super delicious.



Ingredients

50ml olive oil
1/2 red onion, 2cm dice
2 cloves garlic, sliced
1 thin eggplant, 2cm dice
1 zucchini, 2cm dice
1 yellow capsicum, 2cm dice
1 tomato, deseeded and the flesh diced
1 tin of diced tomatoes
1/2 bunch of fresh basil, chopped
1/2 bunch of continental parsley, chopped

Method

Chop up all ingredients.


Heat a large heavy-based frypan to a medium heat and add the oil and sauté the onion for 2 minutes.




Add the garlic and sauté for 1 minute.

Add capsicum and cook for another 2 minutes.


Add eggplant and cook for another 2 minutes.


Add zucchini and cook for a final 2 minutes.


Add the two types of tomatoes and stir through.


Turn off the heat, add the chopped basil and parsley and season well.


Serves 4-6 people and takes around 30 minutes to prepare. Another recipe from the family recipe book.
